Recipes from the Baby Boss Kitchen

If there is anything we love to do more than make the coolest baby gear you've ever seen, it's cook. And eat. And eat while we cook. And since there is nothing better than dining in good company, we thought we would share some of our favorite recipes with you, so that you too can dine in Baby Boss style.

Just in time for the 4th of July, we thought we'd start with a classic family favorite, our Chili Bean Casserole. It's easy, it can be served either as the main dish or as a side, and, most importantly, it's downright delicious. We seriously suggest giving it a try.

So, without further ado...

Ingredients

1 stick of butter (I never said it was healthy, I just said it was good)
2 large onions, diced
2 medium bell peppers, diced
2 stalks celery, diced
3 toes fresh garlic, chopped
4 cans Trappey's kidney beans with chili sauce
2 cans Ro-Tel tomatoes with green chives
2 cups grated American cheese
1 1/2 lbs ground meat

Brown the ground meat, drain off fat and move into a large bowl. Melt butter and cook onions, bell pepper and celery until soft. Add beans and tomatoes and garlic. Season with salt and pepper - but not too much pepper, as the Ro-Tel tomatoes have a kick of their own. Add cooked ground meat and then cook over a low flame, stirring often, for about 45 minutes. Add grated cheese, move into a covered baking dish, and bake in 300 degree oven for an hour. Serve over rice and enjoy!

This dish serves 8 to 10 people, so it's perfect for your 4th of July cookout. As a bonus, since it reheats perfectly, it can easily be made ahead of time and then put in the oven before serving.
